over on instagram ( @fulla_yum 😏 ) I am dedicating this week to the ones who don’t have time, patience or cooking savvy to break a sweat in the kitchen this week, but still want to do right and cook themselves along with their loved ones epic weeknight dinners!

so, with a few ingredients (most of which you probably have on hand), a few minutes and a single sheet tray you will be Golden in your home for this 'week of sheets'. (that's what i'm calling this sheet pan series, pretty clever huh?! 🥴)

Let's start with a crowd favorite that boasts a difficulty level of about a zero.

perfectly seasoned and roasted veggies topped with juicy sweet and spicy Italian sausages.

I recommend getting yourself some really great sausage links from your local butcher preferably made in house instead of the package sort. They plump up so much thicker and are insatiably juicy to boot. but of course if that isn't a possibility, you're gonna just have to do what you got to and bust open a pack of that good ole' stonybrook Italian sausage.

(serves 2-3)

grocery list

sweet sausage links (3)

spicy sausage links (3)

fresh thyme

things I assume you have on hand

evoo

green, red & yellow peppers ( 1/2 each )

red onion (1 - med)

yellow onion ( 1 - med)

italian seasoning

salt

fresh cracked black pepper

method.

🌀 preheat oven to 400 degrees. In the meantime thinly slice peppers and quarter onions, brown the links on both sides and set aside.

🌀arrange the peppers, onions and thyme sprigs on your sheet pan and drizzle over a generous amount of evoo, liberally season with the s&p and italian seasoning.

🌀top the veg with browned sausage links.

🌀roast for up to an hour checking doneness after about 30 minutes.

🌀serve as is or over a silky mash potato situation. discard thyme sprigs before serving.
