i'm not a person big on breakfast, mostly because it feels like a lot of work for very little reward, so I usually air on the side of brunch dishes or something savory and salacious when it comes to my morning eats. [Also, Mexican dishes slap regardless] huevos rancheros have been my go to breakfast/brunch order for the last year or 2, there are endless versions and variations of this recipe and we love that for eggs over here. Not only is it easy to make but it's delicious and most important filling. Outside of putting a little color on the tortillas everything can be made in one skillet as well as eaten out of same said skillet. garnished with some cotija, cilantro and a lime wedge squeeze and the fiestas UP!
