sheet pan baked feta + veggies.

one time for the vegetarian crowd! this dish is a riff off of that wildly viral baked feta and tomato pasta. I thought to myself "I would love that, but action packed with veg and over a pasta that's a little more dainty", so as not to interfere too much with the texture and flavor combo of the mixed veggies. of course you can switch this up and use any of your favorite greenery, etc. & that my friends, is the beauty of a one pot/pan meal, there are no rules and as long as whatever you're making is well seasoned and sautéed, braised or roasted to perfection, you can do it anyway you like it.

please be sure to not only thinly slice the lemons but, do not forget to remove all of the seeds. You will be able to eat them whole, rind and all (once cooked) without that overwhelming bitter and plain old disgusting taste, if you were to leave the seeds in.

(serves 4)

grocery list

bunch of brocollini - 1 (trimmed and cut in halves)

grape tomatoes - 1 pint (halved)

red onion - 1 medium (cut into wedges)

lemon - 1 ( ½ thin sliced, seeds removed, other ½ for serving)

feta cheese blocks - 2 8oz (sliced in half)

things I assume you already have on hand

garlic cloves - 3 (very thinly sliced)

evoo - 3 TBSP

cumin - 1 tsp

chili powder - 1 tsp

smoked paprika - 1 tsp

rpf - 1/2 tsp

s&p - to taste

subs

broccolini - head of broccoli

tomatoes - cherry or mixed tomatoes

red onion - shallots

evoo -any tasty neutral oil

method.


🌀preheat oven to 400 degrees, on your sheet pan, arrange the broccolini, tomatoes, garlic, onion and lemon slices. squeeze lemon juice over everything, drizzle with olive oil and massage all of your veg.

🌀sprinkle over all spices and season with salt and pepper, toss until evenly coated.

🌀nestle the feta slices into the vegetables.

🌀Roast for 20 to 30 minutes, tossing halfway through but leaving the feta in place, until veg is fork tender, tomatoes burst and feta has a golden glow.
🌀Serve over orzo or pasta of choice. Drizzle with more olive oil and squeeze remaining lemon. If you want to add a little herby sitch over top at the end, make that happen!
